GRAPES: Nebbiolo (Chiavennasca).
PRODUCTION AREA: Vineyards situated at altitudes ranging from 300 to 550 meters above sea level, on sandy-loam soils that are shallow and not very fertile, supported by dry-stone walls.
HARVEST: From late September, the grapes were hand-picked and placed in 4.5 kg crates to be airdried, losing about 30% of their weight before being vinified in January.
AGEING: For several years, the wine was aged first in barrels and then in bottles in the Chiuro cellars at 300 meters above sea level. Subsequently, the bottled wine was transferred to high altitude in the Carosello 3000 cellar in Livigno.
TASTING NOTES: Medium ruby color; prolonged ageing is expressed through still- erceptible aromas of ripe red fruit alternating with classic spices such as pepper, cinnamon, and clove, but also notes of licorice, mushroom, and hay. The flavor is dry, with a black fruit aftertaste; the enveloping tannin is well balanced by fresh acidity and a long, savory finish.
ALCOHOL CONTENT: 15.5% vol
OPTIMAL STORAGE: The wine has been bottled only in magnum format. Thanks to high-altitude ageing, it displays evolution characteristics that suggest ageing potential of more than twenty years.
On the peaks above Livigno, the Carosello 3000 mountain huts is where the Sfursat Carlo Negri undergoes ageing. Here, amid significant temperature swings and rarefied air, the wine develops structure and freshness that reflect the purity of the Valtellina region.
